INGREDIENTS
For the Salad:
5 oz fresh arugula
2 ripe peaches, sliced thin (about 1½ cups)
1 cup fresh blueberries
4 oz goat cheese, crumbled
½ cup pecan halves
1 tablespoon butter
1 tablespoon brown sugar
¼ teaspoon cinnamon
¼ red onion, sliced very thin
For the Honey Lime Vinaigrette:
3 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice (about 1 lime)
1 tablespoon honey
1 teaspoon Dijon mustard
1 small garlic clove, minced
Salt and black pepper to taste
STEPS
Make the candied pecans: In a small skillet over medium heat, melt the butter. Add the pecans, brown sugar, and cinnamon. Stir constantly for 3 to 4 minutes until the pecans are coated and fragrant. Pour them onto a piece of parchment paper and spread them out immediately — they harden fast. Let them cool completely before adding to the salad. (These are dangerous to have sitting around. Just a warning.)
Make the vinaigrette: Whisk together the olive oil, fresh lime juice, honey, Dijon mustard, and minced garlic in a small bowl or jar until smooth and well combined. Season with salt and pepper to taste. If the dressing tastes too tart, add a little more honey. If it tastes too sweet, add a squeeze more lime. Adjust it to your preference — this dressing is very forgiving.
Slice the peaches: Right before assembling, slice your peaches thin. Do this last so they stay fresh and do not oxidize. If your peaches are very ripe, handle them gently — they bruise easily and you want clean slices that hold up in the salad.
Assemble: Add the arugula to a large serving bowl or platter. Layer the sliced peaches and blueberries over the top. Add the thinly sliced red onion, crumbled goat cheese, and cooled candied pecans. Drizzle about half of the vinaigrette over the salad and toss gently to combine. Taste, then add more dressing as needed. Serve immediately.
To make it a meal: Add grilled chicken sliced over the top, or a piece of pan-seared salmon. Both pair beautifully with the honey lime dressing and the sweetness of the fruit.
NOTES
Peach swap: Nectarines work just as well as peaches here and are slightly easier to slice since the skin is smoother. Mango is also a delicious option if peaches are not in season.
Nut alternatives: Walnuts or sliced almonds can replace pecans. If you are skipping nuts entirely due to allergies, roasted sunflower seeds add great crunch without the allergen risk.
Cheese swap: Feta works well if you prefer a saltier, firmer cheese. The flavor profile shifts slightly but it is still delicious. Burrata is an indulgent upgrade if you really want to impress someone.
Dressing ahead: The vinaigrette can be made up to 5 days ahead and stored in a jar in the fridge. Shake or whisk well before using — the olive oil will solidify slightly when cold, which is completely normal.
Do not dress in advance: Arugula wilts faster than most greens once dressed. Assemble the salad and add dressing right before serving, especially if you are bringing this to a party.
Make it ahead for a party: Keep all components separate — greens in one container, fruit in another, pecans in a bag, dressing in a jar. Assemble at the table. Takes two minutes and looks like you put in a lot of effort.
FAQ
Can I use frozen blueberries? Fresh blueberries are strongly recommended here. Frozen blueberries release a lot of liquid as they thaw and will turn the arugula soggy and the dressing a purple-grey color. Save the frozen ones for smoothies and baking — this salad deserves the real thing.
Can I make this without the candied pecans? Yes, absolutely. Plain toasted pecans or raw pecans still work well. The candied version just adds an extra layer of sweetness and crunch that plays really nicely against the peppery arugula. If you are short on time, grab a bag of store-bought candied nuts and call it done.
What can I use instead of arugula? If you are not a fan of peppery greens, baby spinach is the closest substitute and will give you a milder flavor. Spring mix also works well. Romaine will hold up longer if you need the salad to sit for a while, but the flavor is more neutral. The peppery bite of arugula is really what makes this salad special though, so give it a chance if you are on the fence.
Is this salad good for meal prep? The components prep well individually, but the assembled salad does not hold once dressed. Store the arugula, fruit, cheese, pecans, and dressing separately and assemble fresh each time. Everything will keep in the fridge for up to 3 days that way.
Can I add protein to make it a full meal? Yes and it is highly recommended. Grilled chicken is the easiest option. Grilled or pan-seared salmon is absolutely incredible with the honey lime dressing and makes this feel like a proper restaurant meal. Shrimp also works beautifully if you want something lighter.
