Ingredients

  • 2 lbs boneless skinless chicken breasts

  • 1 cup chicken broth

  • 1 cup heavy cream

  • ½ cup grated parmesan cheese

  • ½ cup sun-dried tomatoes (drained and chopped)

  • 3 cloves garlic, minced

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • 2 cups fresh spinach

  • 1 tbsp butter (optional, for richness)

Instructions

1. Add ingredients to the crockpot

Place the chicken breasts in the bottom of the slow cooker.

Add:

  • chicken broth

  • heavy cream

  • garlic

  • sun-dried tomatoes

  • Italian seasoning

  • paprika

  • salt and pepper

2. Cook

Cover and cook:

LOW: 4–5 hours

HIGH: 2–3 hours

The chicken should be tender and cooked through.

3. Shred or slice

You can either leave the chicken breasts whole, slice them, or shred them directly in the crockpot depending on how you want to serve the dish.

4. Finish the sauce

Stir in:

  • parmesan cheese

  • spinach

  • butter (optional)

Cover for 5–10 minutes until the spinach wilts and the sauce thickens.
