Crockpot Creamy Ranch Chicken
Some nights you just need a dinner that basically cooks itself. This crockpot creamy ranch chicken is rich, comforting, and ridiculously easy to throw together with just a handful of ingredients. Let the slow cooker do the work and by dinner time you’ve got a creamy, cozy meal ready to serve over rice, pasta, or mashed potatoes.
Ingredients
2 lbs boneless skinless chicken breasts
1 packet ranch seasoning
8 oz cream cheese
½ cup chicken broth
1 cup shredded cheddar cheese
optional: chopped parsley for garnish
Instructions
Place chicken breasts in the bottom of the crockpot.
Sprinkle the ranch seasoning evenly over the chicken.
Pour the chicken broth over the top.
Place the block of cream cheese on top of the chicken.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
Once the chicken is cooked through, shred it with two forks directly in the crockpot.
Stir the cream cheese and juices together until the sauce becomes smooth and creamy.
Add shredded cheddar cheese and stir until melted and combined.
Serve over rice, pasta, mashed potatoes, or even on sandwich buns.
