Ingredients
1 cup fresh strawberries, hulled and roughly chopped
2 tablespoons balsamic vinegar
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/3 cup extra virgin olive oil
1 to 2 tablespoons water, if needed
Instructions
Add the strawberries, balsamic vinegar, apple cider vinegar, honey, Dijon mustard, salt, and black pepper to a blender.
Blend until the strawberries are completely smooth and the mixture is bright and uniform in color.
With the blender running on low, slowly pour in the olive oil. This helps the dressing emulsify and gives it a smoother, more cohesive texture.
Check the consistency. If the vinaigrette feels too thick, blend in 1 tablespoon of water at a time until it reaches your preferred texture.
Taste and adjust. If your strawberries are very sweet, you may want a little more vinegar for balance. If they are slightly tart, an extra teaspoon of honey will round out the flavor.
Pour into a jar or serving container and use right away, or chill until ready to serve.
Notes
Fresh strawberries give this vinaigrette the best flavor and color. If using very ripe berries, reduce the honey slightly and taste before adding more.
For a softer, slightly more mellow finish, use white balsamic instead of regular balsamic. For a deeper, richer flavor, keep the balsamic as written.
Storage
Store covered in the refrigerator for up to 3 days. Shake or stir well before serving, as fresh fruit dressings naturally separate over time.
