💡 Cold butter, cold water, cold everything. Warm butter is the enemy of a flaky crust. If your kitchen is hot, pop the cubed butter back in the freezer for 10 minutes before you start.

THE SECRET TO A PIE THAT SETS

Instructions
Make the crust
Mix the dry, cut in the butter. Whisk flour, sugar, and salt in a large bowl. Add the cold cubed butter and cut it in with a pastry cutter or your fingers until you have pea-sized pieces. You want visible bits of butter — that's what makes it flaky.
Add water, don't overwork. Drizzle in ice water 1 tablespoon at a time, tossing with a fork, until the dough just holds together when squeezed. Divide into two discs, wrap, and chill at least 1 hour (or while you prep the filling).
Make the filling
Macerate. Toss the chopped rhubarb and strawberries with the sugar in a large bowl. Let sit 30 minutes.
Drain. Pour the fruit into a colander and let the released liquid drain off completely. Give it a gentle shake. Don't rinse — just drain.
Thicken. Return the drained fruit to the bowl. Add cornstarch, lemon juice, vanilla, and salt. Toss until every piece is coated and no dry cornstarch remains.
Assemble
Roll the bottom crust. On a floured surface, roll one disc into a 12-inch circle. Lay it into a 9-inch pie dish and trim the overhang to about ½ inch. Pour in the filling and dot the top with the small pieces of cold butter.
Lattice the top. Roll the second disc and cut it into ¾-inch strips. Lay half the strips across the pie in one direction, then weave the remaining strips perpendicular, lifting alternating strips as you go. (Not weaving today? A solid top crust with 4–5 vent slits works perfectly.) Trim, fold the edges under, and crimp.
Egg wash and sugar. Brush the lattice with beaten egg and sprinkle with coarse sugar.
Bake
Start hot. Bake at 425°F for 20 minutes to set the crust. Place a baking sheet on the rack below to catch any drips.
Drop the heat and finish. Reduce to 375°F and bake 35–45 minutes more, until the crust is deep golden and the filling is bubbling thickly in the center. If the edges brown too fast, tent them with foil.
COOL COMPLETELY. Transfer the pie to a wire rack and let it cool at least 4 hours, or overnight. I know. Do it anyway. This is the step that makes it slice clean.

A Quick Word on Rhubarb
If you're new to rhubarb, two things:
The leaves are toxic — the stalks are not. Rhubarb leaves contain oxalic acid and should never be eaten. Most rhubarb at the store comes with leaves already removed, but if yours has any, trim and discard them. The pink-and-green stalk is the only part you want.
You don't need to peel it. Just trim the dry ends and any tough stringy bits, then chop. Younger, thinner stalks are the most tender; if yours are thick and fibrous, a quick peel of the outer layer doesn't hurt.

Can I Use Frozen Rhubarb?
Yes — and a lot of you will need to, since fresh rhubarb has a short season. Two adjustments:
Don't fully thaw it before measuring, but do let it thaw enough to drain. Frozen rhubarb holds even more water than fresh, so this matters.
Thaw, then drain it hard. Let it sit in a colander until it stops dripping, and press out the extra liquid with a paper towel. Then proceed with the macerate-and-drain step as written. Some bakers add an extra tablespoon of cornstarch when using frozen — if your rhubarb seemed especially wet, do it.
Everything else stays the same.
TIPS & NOTES
Chill the assembled pie before baking if your kitchen is warm and the butter softened during assembly. 15 minutes in the fridge keeps the crust flaky.
Always bake on a sheet pan. Fruit pies bubble over. A sheet pan below saves your oven floor and your sanity.
Watch for center bubbling, not edge bubbling. The middle is the last to come to temp, and the cornstarch needs that heat to activate.
Cool on a rack, not the counter. Air circulation underneath stops the bottom crust from steaming and going soggy.
